WHAT'S THE STORY HERE?
The story of Cas’ Pierogi & Kielbasa begins with the man himself…
Casimir J. Krolak. A Polish-American WWII veteran, Cas worked multiple jobs to support his family. All the while, he retained a wonderful sense of humor and a love for Polish food and polka music. The idea for the food truck was conceived as Cas shared his life story with his family and friends. It then became a reality as an affectionate and fitting tribute to his memory.
The truck itself has a story of its own to tell – originally a Bergen County NJ school classroom, it was bought by a firefighter and chef in 2013, who meticulously converted it into a mobile café. We purchased the truck from that family in 2017 and began the makeover to transform it into Cas’ Pierogi & Kielbasa. With help from talented and artistic family members, the truck you see today was brought to life.
Chef Dave called upon memories of the tastes, textures, aromas and even sounds of his childhood to conceptualize and create our menu. Preparation is extremely important; nothing is compromised in the creation of our food. We are passionate about pierogi and kielbasa and we will never sacrifice quality for price. Everything has to be just right to bring traditional Polish food to our customers, and we hope you’ll enjoy eating our food as much as we enjoy bringing it to you.
